Keep a jar of our classic salad dressing in the fridge at work so you can easily have your daily dose drizzled on your lunchtime salad/grains. 

Ingredients:

1 cup of extra virgin olive oil
2 tbsp of Willy’s ACV
1 tsp of honey
2tsp of dijon mustard 
1 fresh garlic clove, minced
Salt and pepper to taste

Add all of the ingredients to a jar, shake to combine, then take to work and pop it in the fridge. Question is - will you let your colleagues use it?! 🤔

Willy's On...Winter Salads: Roasted Veggie Salad w Willy's On...Winter Salads: Roasted Veggie Salad with Turmeric and Tahini 🥙

Chickpeas are the main characters here, bringing a hefty dose of plant-based protein to the table. Roasting cauliflower and carrots not only enhances their natural sweetness but also boosts the salad's fibre content. With a rainbow of veggies, this salad is a nutrient powerhouse, featuring antioxidants, vitamins, and minerals galore. As for the dressing: tahini brings healthy fats, vitamin E, and minerals to the party; 
Turmeric packs a flavourful punch while potentially supporting your body's natural defences, and our ACV adds a dose of gut-friendly probiotics which may help with digestion.

You will need: 

• 2 tbsp avocado, olive or coconut oil
• 2 tins of chickpeas, drained and rinsed
• 1 medium head of cauliflower, chopped
• 3 large carrots, peeled and chopped (keep the peel on if organic)
• 2 tsp cumin
• 1 tsp turmeric
• ½ tsp black pepper
• 1 tsp salt
• ½ tsp cinnamon
• Coriander for garnish

Dressing

• 3 heaped tbsp tahini
• 1-2 tbsp Willy’s ACV, depending on desired tang.
• 1-5 tbsp hot water
• Salt + pepper to taste

Directions: 

1. Preheat the oven to 200C and line a tray with baking paper.
2. In a large bowl, toss the cauliflower, chickpeas and carrot along with the oil, salt and spices. 
3. Arrange in a single layer on the baking sheet and bake for 35-40 minutes, or until the vegetables are soft and golden and the chickpeas are slightly crunchy.
4. To make the sauce, whisk together the tahini and ACV. It will firm up, but that’s okay. Slowly add 1 tbsp of hot water at a time, whisking after each one, until you get a thick, soft and creamy, pourable sauce.
5. Spoon the traybake into a bowl, top with a generous drizzle of the tahini sauce and garnish with plenty of coriander.
