It’s definitely a cocktail you can impress your friends with. Bursting with apple, subtle hints of sweetness and warming cinnamon tones, this cocktail is an autumn and winter season specialty. 5 royal gala apples, grated

60 granulated sugar

60g demerara sugar

2 cinnamon sticks

120mls Willy’s Original ACV

For the cocktail…

3-4 tbsp egg whites

200ml apple juice

Slice apple, for garnish

Ground cinnamon



  1. Grate your apples and pop into a jar along with your sugar and Willy’s ACV and shake for around 30 seconds or so. Pop into the fridge and leave to sit for 2 days.
  2. Remove and strain the juice into a bowl using a fine mesh sieve to ensure no bits end up in the syrup. You can keep the pulp for porridge toppings.
  3. Pour the syrup into a mason jar and keep in the fridge for up to 4 months.
  4. To make your cocktail, pour into a shaker your egg whites and 6 tbsp of your syrup and shake for 30 seconds until the egg white starts to foam.
  5. Then add in your ice and 200ml apple juice and serve with a sliced apple and a sprinkling of cinnamon.
