Add some colour to your meals with this vibrant pink beetroot mayo that’s full of flavour and super versatile!
Time: 5 mins
- 500 ml Vegetable oil
- An egg
- 2 tbsp of ACV with beet
- 1 garlic glove (optional), peeled
- 1 tbsp of water
- Pinch of salt
- Place the egg, apple beet cider vinegar, garlic (optional), water and salt in a large bowl and blend
- Once you’ve blended all the ingredients, very slowly dribble in the oil to make a thick mayonnaise. As you add the oil, the mixture will thicken
- If It’s too thick, you can thin it a bit with drops of vinegar or lemon juice. Remember, adding more oil, will actually make it thicker!
