Add some colour to your meals with this vibrant pink beetroot mayo that’s full of flavour and super versatile!

Ingredients

  • 500 ml Vegetable oil
  • An egg
  • 2 tbsp of ACV with beet
  • 1 garlic glove (optional), peeled
  • 1 tbsp of water
  • Pinch of salt

Method

  1. Place the egg, apple beet cider vinegar, garlic (optional), water and salt in a large bowl and blend
  2. Once you’ve blended all the ingredients, very slowly dribble in the oil to make a thick mayonnaise. As you add the oil, the mixture will thicken
  3. If It’s too thick, you can thin it a bit with drops of vinegar or lemon juice. Remember, adding more oil, will actually make it thicker!
