Strawberry shrub cocktail

By Sailor& Scout
“Oh my this was delicious – my first attempt at an ACV Shrub Cocktail, and it’s taken status as one of my all-time favourites, just like that, because it is SO easy to make and SO delicious.”

Prep time: 10 mins
Steep time: 1 day

Willy’s Apple Cider Vinegar
Dry Gin
Soda water

Pre-Drinking Prep

  1. A day or two ahead of your cocktail drinking, add chopped strawberries, Apple Cider Vinegar and sugar in equal measures into a jar. Shake it all up and leave it to steep in the fridge until you need it. The longer you leave in the fruit, the deeper the strawberry flavour. Once you’re happy with the taste, you can strain out the berries and leave the syrup in the fridge for long-term use.
  2. Once your syrup is ready, add 50ml to a glass, with 50ml dry gin (we recommend Chase Gin). Add ice and top with soda. I used a lime garnish, but you could add fresh strawberries or mint. Enjoy! #maddymakescocktails

I discovered that a ‘Shrub’ Cocktail is made from steeping fruits in vinegar and sugar to create a syrup you can use as the basis of many drinks. It’s delicious even with just soda water, and the syrup keeps in the fridge so you can use it all summer. I implore you to make a batch!”
