Vegan Cauliflower Cheese Bake

Ingredients

  • 1 large head of cauliflower cut into florets
  • 200g of cashews
  • 1 tbsp mustard
  • 2 tbsp Willy’s Apple Balsamic Vinegar
  • 350mls cashew milk
  • 1 tsp salt
  • Optional + non-vegan: parmesan for topping

Method

  1. Preheat the oven to 175c and get out a baking dish.
  2. In a pot on the stove, steam the cauliflower florets until just tender – roughly 5-7 minutes.
  3. While the cauliflower is steaming, add the cashews to a bowl and cover with boiling water. Leave to soak for 5 minutes.
  4. Strain the water from the cashews and add the nuts to a blender with the mustard, balsamic vinegar, cashew milk and salt. Blend until smooth and creamy.
  5. Add the cauliflower to the baking dish and pour over the cheese sauce, ensuring every piece is coated. If using the parmesan, grate over the top of the cauliflower.
  6. Bake for 20 minutes or until golden brown and just set. Enjoy!
