Vibrant veggie chilli

Great for a healthy evening dinner, freezes easily if you wish to batch cook and a good source of protein

Ingredients

  • 1 large drizzle of olive oil
  • 2 peppers of your choice
  • 2 garlic cloves
    1 large red onion 
  • 1 tsp of dry chilli flakes
  • 1 tsp of cayenne pepper
  • 1 tsp of fennel seeds
  • 1 tsp of cumin
  • 2 tsp of paprika
  • 2 tsp of AVC
  • 1 sprig of basil
  • 1 veggie stock cube
  • 50g tomato puree
  • 400g tin of chopped tomatoes
  • 2 tins of desired beans ( we suggest black beans or kidney beans and then a general bean mix)
  • 150g Godminster truffle cheese
  • salt and pepper to season 

Method

  1. Heat frying pan to a medium heat and add olive oil
  2. Chop peppers into slices and add to pan – allow to cook for about 2 mins
  3. Chop onions and garlic and add to pan – allow to cook for a further 2 mins
  4. Add fennel, chilli flakes, paprika and cumin, cayenne pepper – stir until it coats all ingredients
  5. Add a splash of AVC 
  6. Add tomato puree and stir 
  7. Add chopped tomatoes and stock cube and stir
  8. Add tinned beans and turn to a low simmer for about 20 minutes
  9. Once all the beans are cooked, place in a bowl
  10. Add cheese and basil to garnish and season to taste
