Vibrant veggie chilli

Great for a healthy evening dinner, freezes easily if you wish to batch cook and a good source of protein

Ingredients
- 1 large drizzle of olive oil
- 2 peppers of your choice
- 2 garlic cloves
1 large red onion - 1 tsp of dry chilli flakes
- 1 tsp of cayenne pepper
- 1 tsp of fennel seeds
- 1 tsp of cumin
- 2 tsp of paprika
- 2 tsp of AVC
- 1 sprig of basil
- 1 veggie stock cube
- 50g tomato puree
- 400g tin of chopped tomatoes
- 2 tins of desired beans ( we suggest black beans or kidney beans and then a general bean mix)
- 150g Godminster truffle cheese
- salt and pepper to season
Method
- Heat frying pan to a medium heat and add olive oil
- Chop peppers into slices and add to pan – allow to cook for about 2 mins
- Chop onions and garlic and add to pan – allow to cook for a further 2 mins
- Add fennel, chilli flakes, paprika and cumin, cayenne pepper – stir until it coats all ingredients
- Add a splash of AVC
- Add tomato puree and stir
- Add chopped tomatoes and stock cube and stir
- Add tinned beans and turn to a low simmer for about 20 minutes
- Once all the beans are cooked, place in a bowl
- Add cheese and basil to garnish and season to taste
