The Mother

She’s alive in every bottle and has been present in our orchards for over 300 years.


We recommend a diluted daily dose of 25ml to enjoy all the benefits ACV has to offer. Think of it as an apple a day.

The Whole


No waste. We send any waste pulp to the anaerobic digester which turns it into natural fertiliser for the orchards. 



Contains many strains of friendly, probiotic bacteria including acetobacter and lactobacillus.

We own the whole process – from the 300 year old apple orchards to the bottling on site.

why apple cider vinegar

Apple Cider Vinegar, one of nature’s gifts made from the humble apple. So much more than a cupboard staple! Willy’s ACV with ‘The Mother’ contains friendly, probiotic bacteria; acetobacter and lactobacillus and with a ph of 5, can help support an alkaline diet. Whilst Apple Cider Vinegar is slightly acidic in ph, when metabolized within the body, Apple Cider Vinegar actually promotes alkalinity, along with other healthy foods like lentils, fresh green leafy vegetables, fruit and nuts. Our advice however is to follow a balanced, healthy diet. Plenty of broccoli, plenty of exercise and a daily dose of Apple Cider Vinegar as part of a dressing, smoothie, or for the purists, simply in a glass of water!

THE mother

We don’t heat treat our Apple Cider Vinegar, leaving The Mother intact. The Mother is the strains of proteins and friendly bacteria that form when Apple Cider Vinegar is left unpasteurised and raw. She might appear as large cobwebs or as a small darker particles in the Apple Cider Vinegar. Either way, don’t be afraid of her. She’s what makes our ACV so special and we recommend keeping her in your daily dose, however you may chose to enjoy it.


We believe our Mother is extra special as our orchards are 300 years old and the apples from these trees have had centuries of goodness circulated through each bough, branch, pip and stalk. We believe she’s especially lively and energetic, so here is how we recommend you make friends with her…
