With our crown jewel Organic Apple Cider Vinegar gaining in popularity by the day, we had the eureka moment in late 2018 of blending Apple Cider Vinegar with other clean, all-natural ingredients to give you a refreshing drink that’s lower in calories and lower in sugar than many big brands on the market.

We wanted to create a drink that was hydrating, refreshing, rejuvenating and also great-tasting, which is why we settled on the blend of Kombucha, ACV and water drawn from underneath our orchards.

We set about fermenting Kombucha from scratch at the farm, trialling small batches and finding our way to the best blends. Our fermenting kettles are named after famous female singers, seven in total – Dolly, Gaga, Adelle, Aretha, Whitney, Nina and Beyonce. When they’re fermenting well, they sing together and (we think) create lots of positive vibes in our kombucha room.

What is fermenting? It involves taking a ‘mother’ culture when fermenting Apple Cider Vinegar or a SCOBY (Symbiotic Culture of Bacteria and Yeast) in the case of kombucha and, by monitoring the temperatures, aeration and taste closely, creating an amazing product that is full of friendly bacteria. 

The first recorded use of kombucha comes from China in 221 BC during the Tsin Dynasty. It was known as “The Tea of Immortality”. Whilst we don’t believe we’re immortal at The Wonky Barn, the blend of ACV and Kombucha in our new fermented drink does give a nice natural boost.

A fusion of two farm-fermented ingredients, this drink is the first of its kind – grown, fermented and made here at our farm in Herefordshire.

It recently scooped Best New Drink at The Natural & Organic Europe Awards in April and was also a finalist in the Best Health & Wellness Drink at The World Innovation Awards, London.
